Pumpkin Pasties [like in Harry Potter]

Okay, so I don’t actually know what the pumpkin pasties from the Harry Potter series look or taste like, but I image these might be pretty close.
INGRDIENTS (makes 12-14 pies)
  • 15 oz canned pumpkin
  • 8 oz cream cheese
  • 1 egg
  • 1/2 c brown sugar
  • 1/4 c sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp pumpkin pie spice
  • 1 1/2 tsp cinnamon
  • 2 packs pie crust dough
  • 1/3 c graham cracker crumbs
  • 1/4 c sugar
  • 1/2 tsp cinnamon
  • mini pastry pie press
DIRECTIONS
  1. mix cream cheese, egg, brown sugar, sugar, salt, vanilla, pumpkin pie spice, and 1 1/2 tsp cinnamon together until creamy
  2. slowly mix in canned pumpkin
  3. roll out the pie crust dough, cut circles to fit in pastry press, and fill press with dough
  4. fill pies with 1-2 spoonfulls of pumpkin filling and press the dough together
  5. combine 1/4 c sugar, 1/2 tsp cinnamon and graham cracker crumbs
  6. lightly brush the the tops of the pies with butter and sprinkle the graham cracker mixture on top
  7. if wanted, add cut out stars for embellishments
  8. bake at 400 degrees for 13-15 minutes
  9. serve warm with whipped cream or vanilla ice cream

If you don’t have a pastry press you can easily make these into turn overs instead. Just cut out squares from the dough instead of circles. Then fold the square in half and press one side together with a fork to create a pocket. Fill with 1-2 spoonfulls of the pumpkin filling, then press the other side together with a fork to seal it all in.
